July Recipes - day 3 - Larry's Fried Rice

3 T peanut oil
1-2 cups cubes meat… we use pork or chicken usually and we marinate it in soy and ginger for a hour or so
2 eggs, beaten
1 cup dry long grained rice cooked and cooled (1 c before cooking)(or 2 cups cooked minute rice)
2 cloves garlic, chopped fine
1 medium yellow onion, chopped fine
½- 1 cup carrots, sliced thin
¼ c. green pepper, diced up fine
Heat wok and add ½ T. peanut oil. Cook the meat until done. Remove to serving bowl. Heat the wok again and add ½ T more of the oil. Pour the eggs in and tilt the wok while they cook until they look like a thin pancake of egg. Cut the egg with the paddle in small pieces and cook for a moment then remove to bowl.
Add the last tablespoon of oil into the wok. Add the garlic and stir, then add all the veggies to the wok. You may add a tablespoon of soy sauce also if you wish. Cook veggies as done as you like them, then add all the other ingredients back to the wok. Stir till hot through… adding soy sauce also if you wish.
Heat the wok and pour1 T of the oil in. Add the cold rice and stir until hot. Remove to the serving bowl.
Serve hot as main dish or as a side.
One note: you can add any veggies you want to the mix: peas, water chestnuts, celery, etc.
