My mom's friend Fay gave me this recipe and it's delicious!

Zucchini Bread

3 cups plain flour
2 teaspoons soda
1 teaspoon salt
½ t. baking powder
1 ½ teaspoon cinnamon
¾ cup chopped pecans

Combine and set aside.

3 eggs
2 cups sugar
1 cup vegetable oil
2 teaspoons vanilla
2 cups grated zucchini
1 8 oz. can crushed pineapple, drained

Preheat oven to 350 degrees. Beat eggs slightly, add sugar, oil and vanilla. Blend until creamy. Stir in zucchini and pineapple. Add dry ingredients. Stir until moistened. Spoon batter into 2 greased and flowered loaf pans. Bake for 1 hour.
